Nothing says celebration like a glass of bubbles and this twist on a classic cocktail will really get the party started.

1 bottle Prosecco (750ml)
8 cherries in vanilla syrup or fresh pitted cherries
4tbsp peach nectar or fresh peach puree

Take four Champagne flutes and place two drained cherries into each glass. Open the bottle of Prosecco and pour it slowly onto the cherries into the centre of each glass. If you pour slowly and steadily in the centre you should be able to fill the glass without it going over. Leave a 2 cm gap at the top of each glass and pour in the nectar slowly on the back of a teaspoon. Serve immediately with nibbles.
