This is a delicious and super versatile brownie. It is a basic brownie that can be served as is, or used for lots of different dessert applications, including as a fudgy, chocolatey layer in our festive the trifle and yummy rum balls.

240g unsalted butter
290g soft brown sugar
140g dark chocolate
220g eggs (approx. 4 large eggs)
115g plain flour
20g cocoa powder
 pinch salt
1

To get started… preheat an oven to 180°C and grease a 30 cm X 20 cm baking tray with a 2 cm lip. Line the bottom of the tray with an exact size sheet of baking paper. Lightly spray the paper with canola spray.

2

For the brownie mix… place the butter, sugar and salt into the bowl of an electric stand mixer fitted with the paddle attachment. Cream on a medium speed until pale and fluffy, use a spatula to scrape the sides of the bowl to ensure it is mixed evenly. Continue to mix and add in the chocolate followed by the eggs one at a time. Sieve the flour and the cocoa powder together and fold into the mixture. Spread the mixture into the tray and level with a palette knife.

3

To bake… bake for 20 minutes or until the brownie is fully cooked. Leave to cool in the tray for 15 minutes and then run a knife around the edge of the brownie to loosen before turning it out onto a cooling rack.
