Coconut, Turmeric & Ginger Porridge with Banana & Passionfruit

Warming and healthy, this bowl of goodness will make sure you have all of the energy you need to keep you going to lunch time. I prefer this served warm with the fresh fruit, but this could also be served cold. Just make it the day prior and loosen in the morning with extra coconut milk.

Fresh turmeric can be found quite easily these days as its nutritional benefits have been lauded in recent years. Go to your local fruit & veg market, health food store and even some supermarkets to pick this up.

Switch the honey for maple syrup to make this dish vegan friendly and switch coconut milk for your favourite plant based milk if you prefer.

1tbsp turmeric, fresh grated
1tbsp ginger, fresh grated
500 ml water
300 ml coconut milk
200g rolled oats
2tbsp honey or maple syrup
1 vanilla pod, seed scraped
1 salt
1tsp ginger, ground
1tsp cinnamon, ground
1 banana, peeled and sliced
2 passionfruit, halved
4tbsp coconut, fresh grated or flakes

Mix the turmeric and ginger with the water and leave to stand for 15 minutes to infuse or cold infuse in the fridge overnight.

Place the turmeric & ginger infusion with the coconut milk, oats, honey and vanilla seeds into a saucepan and place onto a medium heat. Heat the mixture to a simmer and cook for 8 minutes or until the mixture thickens.

Remove from the heat and stir in the salt, divide the mixture into four bowls and top with fresh banana, passion fruit seeds, fresh grated coconut and a light dust of cinnamon & ginger powders.
