Garlic & Rosemary Baked Vacherin Mont D’Or

Irresistible! Wave this in front of the “I’m too full” crowd after Christmas lunch and we’ll see who gives in first. You can of course swap this cheese for any of your favourite soft washed rind varieties, speak to your cheesemonger for suggestions.

You can prep the cheese and leave it in the fridge up to a couple of days before serving. Remove and let it come to room temperature for at least an hour before baking.

1 garlic head, roasted
1 Rosemary sprig
1 whole Vacherin Mont D’Or

To get started… preheat the oven to 180°C and open the cheese. Remove the cheese from its wooden case or and line the case with baking paper, put a sprig of rosemary in the base and put the cheese back in its case. Place the cheese (in its tray) onto a baking tray and use a paring knife to make 6 even spaced incisions into the cheese and stuff each hole with a roasted clove of garlic or sprig of rosemary.

To bake… bake the cheese for 8-10 minutes and then remove and serve immediately with lavosh or cheese biscuits.

*  Wrap a head of garlic into aluminium foil and place into an oven preheated to 180°C. Bake for 30 – 45 minutes until the garlic has roasted, turn the oven off and leave the garlic in to cool for 15 minutes.
