325g plain flour
25g baking powder
200g caster sugar
10g ground ginger
10g bicarbonate of soda
112g unsalted butter
85g golden syrup
55g egg (approx. i large egg), beaten

To make... sift the flour, ginger, bicarbonate of soda into a mixing bowl and add the sugar and salt. Heat the butter and syrup very gently in a small pan, mixing occasionally, until the butter melts. Leave to cool until just warm, pour on to the dry ingredients. Add the egg and mix thoroughly.

Portion the dough into 12 balls approx. 65 g -70 g each and use your hands to roll them into a ball. Chill them in the fridge for 20 minutes while you preheat your oven to 170C.

To cook... bake six biscuits at a time, place them onto a standard size baking tray lined with baking paper and bake for 15 - 18 minutes. Remove from the oven and leave to cool on a wire rack and bake the remaining six biscuits.
