Meyer Lemon Posset

A lemon posset is one of the quickest and easiest desserts you'll ever make. This classic British treat is renowned for its simplicity and rich, creamy texture. With just a few ingredients and a tiny bit of science, you can create a smooth, velvety custard-like consistency.

The vibrant flavour of fresh lemon gives the posset a refreshing tartness that perfectly balances its sweetness. For this recipe, we've used Meyer lemons, generously gifted by my sister-in-law from her homegrown supply. Meyer lemons are a sweet, thin-skinned citrus fruit, a cross between a regular lemon and a mandarin orange. You can use any variety of lemon you like.

Typically served chilled, the posset is a delightful and elegant treat that's both light and indulgent. It's often garnished with a sprinkle of lemon zest, fresh berries for a touch of colour, or something crisp like our delicious Almond & Lemon Tuile (pictured) for added texture.

600g thickened cream (35% fat) + extra for dolloping
150g caster sugar
1 zest of Meyer lemon
40g freshly squeezed Meyer lemon juice

To start… combine the cream sugar, sugar and grated zest into a small saucepan and place over a medium heat. Stir the mixture continuously until the sugar has dissolved, do not allow it to boil.

Remove from the heat... and add the lemon juice and stir well to thoroughly combine.

Pour the mixture... into glasses and place in the fridge to set.

Allow it to chill... for 2-3 hours.

To serve... top with a generous dollop of whipped cream and some fresh grated lemon zest and your favourite tuile.
