Papaya Smoothie Bowl with Chia

A bright and healthy start to any day, these stunning looking edible bowls will put a smile on your dial and help you kick goals for the rest of the day. The blended fruit is topped with soaked chia seeds – these tiny seeds are loaded with nutrients including protein, fibre, and antioxidants.

Freshness is key here so visit your local market to find the best quality fruit. Prepare the strawberries, mangoes, and banana the night before, then freeze overnight so you’re good to go in the morning.

You can substitute the ingredients depending on the season and your preference but this version is totally vegan.

200g strawberries, washed, hulled and frozen
150g mango flesh, frozen
1 banana, sliced and frozen
40g chia seeds, white and black
350g almond milk
1tbsp maple syrup
2 large papaya, halved and seeds scooped out. (reserve 1 tbsp of seeds, discard the rest)

TOPPINGS

1tbsp toasted flaked coconut
2tbsp toasted pepitas (pumpkin seeds)
4 strawberries sliced

Prepare… the strawberries, mango and banana and place in a container and freeze overnight.

The next morning… combine the chia seeds in a bowl with the almond milk and maple syrup and stir well. Leave the seeds to absorb the liquid and expand, this will take around 20 minutes.

Meanwhile… take a small knife and a teaspoon and scoop out flesh to form a bowl shape from each half of the papaya. Add the scooped flesh along with the reserved papaya seeds to a bar blender or similar.

Add… the frozen banana, strawberries and mango to the blender and blend until you have a smooth and thick sorbet style mix.

Spoon the mixture… back into the papaya cavity and top with soaked chia seeds.
