A fun and fruity cocktail for those warm afternoons and evenings, great with a crowd as you can make this in a big batch and let your guests help themselves.

100 ml sugar syrup 1-1
1 whole pineapple, peeled flesh
500 ml spiced rum
75 ml Malibu or Coconut Rum
 crushed ice

Cut the peeled pineapple into chunks and freeze hard. Leave to defrost in a bowl or container in your fridge overnight.

Blitz the syrup with the defrosted pineapple flesh and juice for a few minutes until super smooth. Pour the juice into a bowl and add the Rum and Malibu. Fill tall glasses with crushed ice and top with the punch.
