Preserved Plums

When fruit is in season then that’s the time to use it. Except when it’s not… I love to preserve ingredients so I can enjoy them year round. This is a fantastic and easy way to preserve plums in Summer to enjoy in cakes, bakes and desserts later on.

This recipe was adapted and inspired by one of our most favourite chefs Jo Barrett, her book Sustain is a must read.

30 whole plums, any variety or a mix, ripe
400 ml vodka or gin, I used Christmas spiced gin from Four Pillars
300g caster sugar
600 ml water
½ vanilla pod, per jar
1 whole cinnamon stick, per jar
2 whole star anise, per jar
4tbsp vinegar, I used sherry vinegar but white vinegar will do

Wash the plums in cold water and pat dry, cut each plum in half and remove the stones. Lay the plums cut side down into sterilised jars interspersing with the spices.

Heat the water, sugar and alcohol in a pan to a temperature of 85C. Remove from the heat and add the vinegar and stir.

Pour the liquid over the plums to cover completely. Lid and leave to cool at room temperature. The fruit will last for 12 months but refrigerate after opening each jar.

Use the fruit in galettes, cakes, desserts or tarts. Unlimited use to enjoy this beautiful fruit when it is out of season.
