Raw Zucchini Salad

Fresh, vibrant, quick and delicious it ticks all the boxes to be named the ultimate summer side dish. The key components are the zucchini, lemon and olive oil which we've combined some of our favourite salady bits to this salad - fresh herbs, sheep's milk fetta, freshly shaved parmesan and quick and jammy Caramelised Onions, but you can substitute with whatever you like. Other variations could include Pesto or Crispy Chilli Oil.

Pair this dish with our Slow Roast Lamb for a perfect complement.

1 zucchini, large
1 garlic clove
1 lemon, zest and juice
½ recipe caramelised onions – link in introduction
40g Sheep’s milk fetta
 q.s. parmesan block, for shaving
2sprigs  fresh dill, generous
2sprigs  fresh mint, generous
 q.s. mild olive oil
 to taste  salt flakes
 to taste  freshly ground black pepper

To prepare... with a vegetable peeler, thinly slice the zucchini and place in a large bowl. Finely grate in one peeled clove of garlic. Add lemon zest and juice. The amount of juice in a lemon can vary and we like this salad lemony so add more if required.

Next... add in Caramelised Onion to taste (we've used half the recipe). Add in the chopped dill and mint.

Crumble in the fetta and add some shaved some parmesan. Glug in some olive oil to create a beautiful dressing, season to taste with salt and pepper and carefully mix the salad.

Serve... Serve immediately with some extra parmesan shavings over the top.
