Roasted Strawberries

More of a technique than a recipe, roasted strawberries are a revelation. Mind blowing flavour is extracted from everyday strawberries after just 20 minutes in the oven. It's as simple as that.

This is a great way to breath life into bland strawberries or use up a glut of strawberries. You can add whatever flavours you like or just have them on their own. Sweeten then with honey or maple syrup. We like them sticky and jammy and golden and we love them with our Honey-Baked Granola

800g strawberries

Preheat the oven 170℃ (340℉)

Wash, hull and half the strawberries and place them straight onto a baking tray. Roast the strawberries in the oven for 20 minutes. Remove from the oven a leave to cool for 10 minutes.

For extra sweetness add honey or maple syrup. (honey is not suitable for vegans)

Also try some brown sugar and a splash of balsamic vinegar.
