90g rolled oats
25g linseeds
40 ml olive oil
 q.s. salt flakes
8g black sesame seeds
25g hemp seeds
25g pepitas
25g sunflower seeds
1g fennel seeds, lightly crushed
8g pepper berry, lightly crushed

To start... preheat your oven to 180°C (fan forced) and prepare two large oven trays by greasing them and lining them with baking paper.

In a saucepan... combine oats, linseeds, water, and half of the olive oil (20ml) along with a generous pinch of salt.

Cook over... medium heat, stirring regularly, until the mixture thickens, approximately 8 minutes.

Transfer... the cooked oat mixture to a blender and blend until smooth.

Divide the... blended oat mixture equally between the two prepared trays, spreading it thinly.

Mix together... the remaining seeds and spices, and season with a pinch of salt

Spread the seed mixture evenly over the oat mixture on both trays.

Sprinkle... salt flakes over the trays and drizzle with the remaining olive oil.

Bake the trays until the crackers are crisp and golden, approximately 50-60 minutes.

Leave to cool... and then store in an airtight container or break to your desired size and serve.
