4 pita breads
600g Slow-roasted Lamb shoulder – link above
½ red onion, peeled and thinly sliced
1 large handful of washed rocket leaves
200g tzatziki
 salt flakes to taste
 freshly ground pepper to taste.

To assemble... make four toasted pita rolls at once by laying them out on a board. Evenly distribute the lamb pieces and some red onion, rocket and big dollop of tzatziki. Season with salt and pepper to taste. Roll up the pita breads and place them in a heated sandwich press and cook until hot and toasted, serve.
