Spiced Push-In Pastry

A forgiving pastry that can literally be push into a cake tin or tart tin to make a tart or pie. Switch or substitute the spices as you wish. This pastry is versatile and light due to the self-raising flour. You can use this pastry to make the Spice Apple Cake.

120g unsalted butter, softened
110g caster sugar
 pinch salt
55g egg (1 large egg)
250g self-raising flour
1tsp mixed allspice
1tsp ground cinnamon
1tsp ground ginger

Cream the butter, sugar and the salt together in a mixing machine fitted with the paddle attachment. Add the egg and mix well before incorporating the sieved flour and spices. Wrap the pastry and leave to rest for about 20 minutes in the fridge before using.
