Three Cheese Grilled Toast

The ultimate Sunday supper three cheese toast showcasing the very best ingredients. We've got: chorizo, caciocavallo, tomatoes, mozzarella, nabucco, sriracha...and that's just half of it!

4 sourdough loaf, slices
1 chorizo sausage, peeled and sliced 5 mm thick
50g Caciocavallo, thinly sliced
5 cherry tomatoes, halved
1 spring onion, thinly sliced
50g Fior Di Latte
50g Nabucco
20 Worcestershire sauce
 Sriracha or similar hot sauce
 black pepper
 fresh coriander leaves

Preheat your oven on grill setting. Cook chorizo in saucepan on medium heat for a few minutes. Leave in pan to cool. Lightly toast bread slices and place on baking tray with baking paper.

Distribute chorizo slices on top of the toast.

Add the caciocavallo evenly on bread and place under grill until cheese is melted.

Remove from the grill and top with tomatoes and spring onions. Place back under grill for 1-2 minutes.

Remove from grill and add torn chunks of fior di latte.

Grate the nabucco over the slices. Place under grill until cheese is melted.

Remove and top with some Worcestershire sauce and sriracha. Spoon chorizo oil over cheese.

Season with pepper as needed and garnish with coriander leaves. Enjoy!
