Toasted Sourdough, Jalapeno Butter, Avocado, Pico de Gallo

Just popped this recipe up as we enjoyed a spontaneous breakfast after friends came round for dinner last night. Our Halloween inspired dinner included Jalapeno butter and Pico de Gallo and we used this up for this delish quick and easy start to the day.

2 sourdough slices, toasted
40g jalapeno butter
½ avocado, ripe, peeled and sliced
2tbsp Pico de Gallo
20g parmesan, finely grated
1tbsp crispy chilli oil

Butter the toasted sourdough with the Jalapeno butter. Arrange the avocado on top of each slice and top with the Pico de Gallo. Grate parmesan and spoon over the crispy chilli oil.
