Tomato Sauce For Pizza

There is nothing wrong with opening a tin of tomatoes and blending them up for a pizza sauce, if you are inclined it is said the best tinned tomatoes for this task are San Marzano variety. You could also use a passata or left over pasta sauce for your pizza. I do all of the above, but when I can and when tomatoes are abundant, in season and downright delicious I make this sauce. I also make heaps if I can and freeze down excess for fresh tomato sauce when pizza making in winter.

1 kg tomatoes, any variety just make sure they are ripe, seasonal and preferably local
 splash olive oil
 to taste salt flakes
 to taste cracked black pepper, freshly ground
4 garlic cloves, peeled
 q.s. dried oregano
 q.s. basil leaves, fresh
 q.s. thyme leaves, fresh

Preheat your oven to 160C.

Cut the tomatoes into large chunks and scatter them onto an oven proof baking tray, drizzle over the oil and season with salt and pepper. Slice the garlic cloves and toss in along with dried oregano and fresh basil leaves and thyme.

Place all into the oven and bake for 1 hr 15 min.

Remove from the oven and pour the contents of the tray including juices and herbs into a mouli and process to a coarse sauce.

Adjust seasoning if needed and use when cool.
