This dressing is magic, it's simple and refreshing and the perfect balance between sweet, salty, spicy and sour. We love it to dress crunchy salads, its delicious with all proteins, chicken, fish, prawns, beef etc and it is the yummiest dipping sauce. The hardest part is getting the balance correct but once you nail this you'll be transforming ordinary dishes into extraordinary.

3tbsp boiling water
2tbsp rice vinegar
2tbsp fish sauce
½ garlic clove
1 birdseye chilli, finely chopped, seeds in
2tsp lime juice
1 finely chopped spring onion
